Shrimp Scampi

Shrimp Scampi 

1 lb shrimp

1 lb linguini

1/2 cup pasta water 

4 cloves garlic, diced finely 

1 tbsp olive oil 

1 tbsp butter 

1/2 tsp red pepper flakes 

1/2 tsp salt 

1/2 cup dry white wine 

1 tbsp tapioca starch 

1/2 lemon 

This recipe happens very fast! 

Cook the pasta right before you start with the shrimp and reserve 1/2 cup of the pasta water. 

Heat a skillet and add butter and oil. Once butter melts add diced garlic, red pepper flakes, and salt and stir until garlic turns brown. Once garlic is brown, immediately add the raw shrimp and cook until they turn pink. Remove shrimp from the pan and deglaze with wine, letting the sauce reduce. Lightly stir tapioca starch (or corn starch) into the sauce to thicken (optional). Cut the heat and meld 1 lb linguini of choice (I used squid ink today which added an amazing umami) and add the shrimp back in. Squeeze the lemon over everything and toss. Serve and enjoy!
