Ropa Vieja

     Ingredients:                                     

2 Lbs Grass Fed Chuck 

2 tbsp tomato paste 

3 peppers 

3 tomatoes (or a can of diced tomatoes) 

1 small can hatch green chiles 

2 garlic cloves 

1 onion

3 cups chicken broth 

1 handful of olives (optional)

1 bay leaves 

1 tbsp oregano 

1 tbsp cumin 

1 tbsp onion powder 

1 tbsp garlic powder 

2 dried ancho chiles 

Sear meat on all sides in a Dutch oven until every edge has a nice brown crust. Set aside. 

Slice onion and peppers thin and sauté in a Dutch oven, set aside. 

In the same pot, cook down the chopped tomatoes until tender, add the tomato paste, spices, and broth, stir for 1-2 minutes then add the broth and green hatch chiles. Simmer for 10 minutes, allowing the chiles to rehydrate, then blend with an immersion blender 

Tuck meat into the broth with a bay leaf and cover with onions and peppers. Add more salt, pepper, and cumin to taste. Option to add a handful of olives. 

Bake in a Dutch oven covered at 325 for 3 hours until the meat is falling apart. Shred meat with two forks. 

Serve with sliced lime, white rice, & black beans.
